Amazing Keto Supper tonight!
Cheesy Cauliflower and Baked Chicken
Cheesy cauliflower:
1/2 cup cheddar cheese
3/4 cup Italian cheese
I only used this combo and proportions because that’s what I had! Any cheese, in any proportions, would probably be just fine!
2-3 Tbsp of cream cheese
1/2 cup is sour cream
1/4 cup of green onion
My measurements were approximate...I never measure!
I put all of that in the bottom of a bowl while I boiled cauliflower. I did about 2/3 of a large head of cauliflower. Once it was tender, I strained it and put it in the bowl with the other ingredients and then mashed.
I put it in a greased baking dish and baked at 375 for about 20-25 minutes or until it started to brown!
It was sooooo good! I hate cauliflower and it usually takes a lot to mask the taste but this seriously tasted like cheesy potatoes!!
